Baked Chicken and Cheese Sandwiches
2 cups shredded chicken 12 slices sourdough bread, ½ inch thick ½ cup each of White Cheddar cheese, Monterey Jack cheese, Parmesan cheese 3 eggs 1 ¾ cup milk ¼ cup onion, minced 2 tsp. Dijon mustard ½ tsp. cumin ½ tsp. chili powder 1 tsp. kosher salt pinch of black pepper 2 tsp. chopped Parsley
Trim crusts from bread. Place 6 slices in 9x9 pan baking pan. Mix cheddar and Monterey jack cheeses and sprinkle half on bread. Place chicken, other half of cheese, then 6 slices of bread to form a sandwich. Beat eggs with remaining ingredients and pour into pan. Pour over bread and bake at 350º for 30 minutes uncovered, or until slightly golden brown. Take out of the oven and sprinkle Parmesan on top. Place back in the oven until golden brown and crispy, 10-12 minutes.
Grilled Chicken Pasta Salad
1 lb. boneless, skinless chicken pieces ¾ cup olive oil 2 garlic cloves, minced 2 tsp. kosher salt 1 tsp. black pepper ¾ lb. bowtie pasta ¾ cup Feta cheese, crumbled ½ cup green olives, chopped ½ cup sun-dried tomatoes, chopped 1/3 cup basil, chopped 1 Tbsp. Lemon zest
In a plastic bag, combine chicken, olive oil, garlic, salt, and pepper. Shake to combine and let marinate 30-45 minutes. Heat the grill, or grill plate on your stove top. Cook chicken on each side for 5-7 minutes, depending on size. Cook pasta according to package directions, and drain completely. Chop chicken into bite size pieces. Combine chicken, pasta, remaining ingredients, and toss together.
